Do you remember how uniquely special Champagne used to be?

In those days, it deserved its reputation as an indispensable accessory in the noble art of seduction. No doubt about it – in the right setting, Champagne was an erotic and electrifying agent.

Today, it is just another socialistic, mass-market product, its fading reputation clinging to the glory days of the past. The gulf between its glamorous advertising and the reality of the champagne itself gets wider with each passing year.

Champagne should not fizz like mineral water. That is only done to trick the tongue which is irritated by all the bubbles and therefore can not explore too much of the taste. That’s why high quality Champagne merely tickles your tongue, re-inforcing and not masking the taste of the wine.

Our Cap Classique is manufactured from our best white wine by vintages only, which has been stored in oak barrels for six months. Following that, the Cap Classique is fermented in the bottle, in the classic – and for that matter, only - way, Methode Traditionelle. It matures for at least 24 months.

Like Champagne, our Cap Classique should not be stored for long. The maturation that a good wine goes through in the connoisseur’s wine cellar has already been done by us.

Champagne should be enjoyed at its best within a year of its release.

If you want to understand the real quality of the Champagne you drink, leave it in the glass for 3 – 5 hours and then taste it again. See if you still like it.
